The Sonosopa 15 Minuite Veggie Ramen

 

Ramen has got to be one of the most incredible dishes out there. It's well balanced with protein, carbs and healthy fats, not to mention the delicious flavour profile and beautiful presentation. Our Sonosopa veggie ramen contains a hearty broth, lots of nutrient rich crunchy veggies, and is finished with a soft boiled egg, holding a creamy golden yolk. Hope you enjoy!

This recipe serves 3 people

Ingredients 

  • 1.25 litres veggie stock
  • 1 tsp chilli flakes (optional heat)
  • A thumb sized piece of ginger
  • 1 garlic clove, thinly sliced
  • 1 tbsp soy sauce
  • 1 tbsp flavoured oil (garlic or chilli works well) 
  • 300g egg noodles
  • 1 pak choi, quartered lengthways 
  • 3 sprigs tendereste broccoli, halved lengthways
  • Handful shittake mushrooms
  • 3 baby corn, halved lengthways
  • A handful of beanshoots
  • 3 eggs (free-range where possible)
  • 1 lime, juiced

Method

Step 1

Add the veggie stock into a large pan with ¾ of the ginger and red chilli flakes (optional), all of the garlic and the soy sauce, and bring to a boil. Cover and simmer gently for 10 minutes.

Step 2

Now the important bit, the eggs! While your stock simmers, add around 3 inches of water to another pan and bring to the boil. Get a timer ready and set for 4 - 6 minutes (depending on how runny you want the yolk). Start the timer and gently add the eggs (in shell) to the water for your desired time. Once done, remove from the water and immediately place into a bowl with water and ice to stop the cooking. After a few minutes, you can peel the eggs, but don't cut yet. 

Step 3

This step can be done at the same time as step 2, or after the eggs are removed. Simply place the cut corn, broccoli, park choi and mushrooms into a steamer basket and steam above the boiled water from the eggs. If you do not have a steamer basket, you can simply blanche (place in boiling water) the veggies for around 1 minute or so, and remove. 

Step 4

Place your egg noodles into the simmering broth for around 2 minutes, then divide the cooked noodles into 3 portions and place into your large ramen bowls. Add the steamed veggies to your bowls, taking care with presentation. Ladle on the broth evenly for each bowl. Cut the eggs in half and present onto the bowl. Finish with the remaining ginger, chilli flakes and drizzle of flavoured oil. Finish with a touch of lime juice.
